Almond-Berry Overnight Oatmeal Bowl With Planet Oat Oatmilk

Have you ever tried overnight oats?!? If not, this is something you really want to check out, especially if you are as addicted to these healthy bowls as I am.
Overnight oats are the perfect breakfast to have ready and waiting for you in the morning. It only takes a few minutes of my time in the evening to mix up. And all I have to do when I wake up (other than making myself a steamy hot cup of cappuccino) is to top with my favorite fruit, seeds and nuts. And an optional, but highly recommended, drizzle of honey.
As you can see, it looks (and tastes) even better when relaxing by the pool :)
You can make overnight oatmeal with any milk (dairy or not), but my favorite for this recipe is oat-milk.

And here is the recipe for you! It makes one huge bowl (about two servings, but depends on how much you can eat!).
You can also place it in little to-go jars like the one I have here. My kids love oatmeal as much as I do, so I put one of these their lunch boxes for a filling and healthy mid-morning snacks. Sounds perfect, right?!? And oh-so pretty.
INGREDIENTS:
YIELD: 2 servings
- 1 1/4 cups (300 ml) Planet Oat Oatmilk, Original
- 1 cup (about 90 gr) old fashioned rolled oats
- 2 tablespoons almond slices
- 1 tablespoon honey (plus extra to drizzle on top if you wish)
- Fresh strawberries, blueberries, raspberries and blackberries for the top
- Pumpkin seeds
PREPARATION:
TIME: 5 minutes to assemble, at least 4 hours in the refrigerator
Place oats in the refrigerator for at least 4 (or best if overnight).
When ready to serve, mix well and top with fresh fruits, one tablespoon of almond slices and the pumpkin seeds if using.
Drizzle with more honey if you'd like.
If you rather eat oatmeal warm, you can simply microwave it for about 1 minute at medium power before topping with the fruit.
You can store in the refrigerator for 2 days before eating.
